Everyday Muffins
Ingredients:
- 2 cups (500ml) cake flour
- 1/2 cup (125ml) sugar
- 1/2 teaspoon (2,5ml) salt
- 1 tablespoon (15ml) baking powder
- 1 egg
- 1 cup (250ml) milk
- 1/4 cup (60ml) Canola oil
- 1/2 cup (125ml) raisins / chocolate chips etc
The Steps:
1. Preheat oven to 180 degrees celsius (400 F). 2. In a medium bowl, mix all dry ingredients. 3. In another bowl, mix egg, milk and Canola oil, and whisk together. 4. Pour egg mixture into dry ingredients and mix together. 5. Add in the raisins / chocolate chips etc. 6. Drop mixture into paper-lined muffin tray. Bake for 18-20 mins.
Allow to cool and ENJOY!!!

Chocolate / Banana Muffins
Ingredients:
- 3 large ripe bananas
- 1 1/2 cups wholemeal self raising flour
- 1/4 cup self raising flour
- 3 tablespoons cocoa
- 1 teaspoon baking powder
- 2 teaspoons mixed spice
- 1/2 cup sugar
- 1/3 cup natural yoghurt
- 3 eggs, beaten
- 2 tablespoons vegetable oil, for greasing tins
The Steps:
1. Preheat oven to 180°C. 2. Remove the skins from the bananas and puree them in a food processor. 3. Place all the other ingredients in a large mixing bowl. 4. Add the banana and stir with a wooden spoon. 5. Place 1-2 tablespoons of mixture into greased mini muffin tins and bake for 10 minutes or until muffins are cooked when tested with a skewer.

Sesame chicken
Ingredients:
- 2 teaspoons minced ginger
- 2 teaspoons minced garlic
- 2 teaspoons Chinese five spice
- 2 tablespoons honey
- 3 tablespoons reduced-salt soy sauce
- 2 teaspoons sesame oil
- 500 g skinless chicken breast fillets, diced
- 1 tablespoon white sesame seeds
The Steps:
1. Mix the garlic, ginger, Chinese five spice, honey, soy and sesame oil in a large bowl.
2. Add chicken pieces to the bowl, mixing well to coat evenly.
3. Marinate in the refrigerator for 4hr, tossing every hour to re-coat.
4. Pre-heat oven to 170C.
5. Place marinated chicken pieces on a wire cake rack on a flat oven tray and cook for 10min. 6. Brush the chicken pieces with the reserved marinade and sprinkle over the sesame seeds. 7. Return tray to oven and cook for a further 3-5min or until chicken is cooked through.

Pancakes with apple and yoghurt
Ingredients:
- 200 g low fat yoghurt, plain or vanilla
- 1/4 cup lemon juice
- 2 eggs, lightly beaten
- 3/4 cup plain wholemeal flour
- 2 large apples, peeled and grated
- 2 tablespoons light olive oil
The Steps:
1. Place all ingredients in a large bowl. Mix until well combined. 2. Heat a non-stick frypan with a little oil over a medium heat. 3. Drop teaspoons of batter into the pan and cook until golden brown on both sides. 4. Remove from pan and repeat with remaining mixture.
Preparation time: 10 minutes Cooking time: 15 minutes Makes: 20 mini pancakes
Notes: Serve with yoghurt and a sprinkle of cinnamon.

Brownies
Ingredients:
- 1 cup light olive oil
- 1 1/3 cups plain flour, sifted
- 2 1/4 cups sugar
- 3/4 cup cocoa powder, sifted
- 4 eggs
- 1/4 teaspoon baking powder
- 1/4 cup oat bran
The Steps:
1. Place all ingredients in food processor and blend until smooth. 2. Pour into a lined 20 cm square baking tin. 3. Bake for 50 minutes at 170°C or until mixture is cooked when tested with a skewer. 4. Slice into small squares or fingers.
Preparation time: 10 minutes Cooking time: 50 minutes Makes: 20 squares |
